HOW TO PREPARE CHOCOLATE AND SOFT FRUIT CAKE:

Beat the eggs and the sugar until obtain a creamy mixture. Then, add the chocolate powder, vanilla extract and mix for 2 to 3 minutes until it's nicely incorporated. Add the flour mixed with the baking powder and beat until a homogeneous mixture. Add the soft fruit and fold with a spatula. Pour the mixture into the prepared pan and bake about 35 minutes. Remove the cake from oven, unmold onto a plate and let cool to room temperature.

Ingredients

  • 2 tablespoons chocolate powder
  • 3 eggs
  • 200 grams (1 1/2 cups) all-purpose flour
  • 150 grams (2/3 cup) granulated sugar
  • 1 tablespoon vanilla extract
  • 150 grams (5 1/3 ounces) soft fruit
  • 1 teaspoon baking powder

Directions

  1. Preheat the oven to 180ºC (350ºF). Grease a round cake pan (20 x 7 centimeters (8 x 2 3/4 inches)) with margarine and sprinkle with some chocolate powder.
  2. In an electric mixer, beat on medium speed the eggs and the sugar until obtain a creamy mixture. Then, add the chocolate powder, vanilla extract and mix for 2 to 3 minutes until it's nicely incorporated. Reduce the speed, add the flour mixed with the baking powder and beat until a homogeneous mixture. Add the soft fruit and fold with a spatula.
  3. Pour the mixture into the prepared pan and bake until a toothpick inserted in the center comes out clean, about 35 minutes (the time depends on the oven).
  4. Remove the cake from oven, unmold onto a plate and let cool to room temperature.
