After years of searching, I found this recipe at my grandmother's house!
These cinnamon lemon cookies are an original recipe from my beloved grandmother, they are part of my childhood. I remember eating them for breakfast or when I came home from school. They are definitely one of my favorite cookies of all time! We hope you love this cookie recipe as much as we do!

These delicious cinnamon lemon cookies are perfectly soft on the outside and inside with the most amazing cinnamon lemon flavor. They don't require any special ingredient, you just need 7 basic ingredients such as cinnamon powder, lemon juice, lemon zest and vanilla extract to add flavor, flour to give consistency to the cookie dough, one egg to make the cookie soft and fluffy, sugar and butter.

HOW TO MAKE CINNAMON LEMON COOKIES

Step 1: Using an electric mixer, beat the sugar and the melted butter until obtain a homogeneous mixture. Pour the lemon juice, lemon zest and beat for 1 to 2 minutes. Add the egg and the vanilla extract and beat until a quite creamy mixture. Add the flour and fold with a spatula until obtain a consistent dough. Lemon dough on a large dish bowl

Step 3: Preheat the oven to 200ºC (400ºF). Line a baking sheet with parchment paper.

Step 6: Remove from the oven, let cool and serve.

TIPS FOR CINNAMON LEMON COOKIES

1. Place the oven rack in the middle. This allows the hot air to circulate evenly around the cookies, resulting in even cooking.

2. When placing the cookies on the parchment paper, leave some distance between them so they don't stick to each other when they start baking.

3. Never open the oven door while cookies are baking. The kitchen temperature is always lower than the oven temperature, what will happen is that the oven temperature will drop and the risk of the cookies sinks increases.

4. Turn off the oven and leave the cookies in the oven for another 5 minutes.

    • 250 grams (1 3/4 cups) self-rising flour
    • 1 medium egg
    • 150 grams (2/3 cup) granulated sugar
    • 1 teaspoon vanilla extract
    • 125 grams (1/2 cup) melted unsalted butter

Add the egg and the vanilla extract and beat until a quite creamy mixture. Add the flour and fold with a spatula until obtain a consistent dough.
    2. Cover the bowl with plastic wrap and refrigerate for about 1 hour.
