Who doesn't like homemade cookies? These delicious lemon cookies coated with cinnamon powder are delicious. It's a simple recipe to make, with few ingredients and excellent presentation. Serve for breakfast, your kids will love it. Bon appetit!!!
MAIN INGREDIENTS OF THIS RECIPE:
- Lemon juice, cinnamon powder, egg, granulated sugar, self-rising flour
HOW TO MAKE CINNAMON LEMON COOKIES:
Beat the sugar and the melted butter until obtain a homogeneous mixture. Pour the lemon juice, lemon zest and beat for 1 to 2 minutes. Add the egg and the vanilla extract and beat until a quite creamy mixture. Add the flour and fold with a spatula until obtain a consistent dough. Cover the bowl with cling film and refrigerate for about 1 hour.
Remove the bowl from the fridge and shape with your hands 20 to 22 balls.
Sprinkle a plate with cinnamon powder. Roll each ball in cinnamon powder until evenly coated
and place in the baking tray, making sure to leave a little room between each one.
Bake for 10 to 12 minutes. Remove from the oven, let cool and serve.

- 250 grams (1 3/4 cups) self-rising flour
- 1 medium egg
- 150 grams (2/3 cup) granulated sugar

- 125 grams (1/2 cup) melted unsalted butter

- In an electric mixer, beat on medium speed the sugar and the melted butter until obtain a homogeneous mixture. Pour the lemon juice, lemon zest and beat for 1 to 2 minutes. Add the egg and the vanilla extract and beat until a quite creamy mixture. Add the flour and fold with a spatula until obtain a consistent dough.
- Cover the bowl with cling film and refrigerate for about 1 hour.
- Preheat the oven to 200ºC (400ºF). Line a baking tray with parchment paper.
- Remove the bowl from the fridge and shape with your hands 20 to 22 balls.
- Sprinkle a plate with cinnamon powder. Roll each ball in cinnamon powder until evenly coated and place in the baking tray, making sure to leave a little room between each one. Bake for 10 to 12 minutes (the time depends on the oven).
- Remove from the oven, let cool and serve.
