HOW TO MAKE OLIVE OIL BISCUITS

Step 1: Preheat the oven to 180ºC (350ºF).

Step 2: Beat the sugar, one egg and lemon zest until a homogeneous mixture. Add the olive oil and mix about 2 to 3 minutes until incorporate. Add the flour and beat until a compact mixture.

Step 3: Place the dough on a table dusted with flour and knead it a little with your hands. Then, roll out the pastry with a rolling pin sprinkled with some flour. Cut the dough with cookie cutters and place in a baking tray lined with parchment paper. Brush with beaten egg and bake about 15 minutes until the biscuits start to turn golden brown.

Step 4: Remove the biscuits from oven, let cool completely and serve.

TIPS FOR OLIVE OIL BISCUITS

1. Place the oven rack in the middle. This allows the hot air to circulate evenly around the biscuits, resulting in even cooking.

2. When placing the biscuits on the parchment paper, leave some distance between them so they don't stick to each other when they start baking.

3. Never open the oven door while biscuits are baking. The kitchen temperature is always lower than the oven temperature, what will happen is that the oven temperature will drop and the risk of the biscuits sinks increases.

4. Turn off the oven and leave the biscuits in the oven for another 5 minutes.

5. Do not open the oven door all the way, leave the door open about 10 to 15 centimeters (4 inches to 6 inches) and wait another 5 or 10 minutes so that the heat enters the kitchen and there is no temperature shock.
