These delicious cinnamon cookies are a homemade recipe from my dear grandmother! I just made a few changes to make this recipe easier and tastier.
It's a very simple recipe that takes just 10 minutes to prepare and 10 minutes to bake in the oven! We usually prepare this recipe at night to eat in the morning for breakfast or for our children to take to school.
To do this, simply cover the dough with plastic wrap and store it in the refrigerator overnight. In the morning, before breakfast, just take the dough out of the fridge, form small portions of the dough into balls with your hands and bake for about 10 to 12 minutes.

HOW TO MAKE THIS SIMPLE AND DELICIOUS CINNAMON COOKIES
Step 1: Melt the butter in the microwave and set aside.
Step 2: In a large bowl, whisk the flour, cinnamon powder and the salt.
Add the brown sugar, egg, melted butter, vanilla extract and whisk until the dough starts to thicken.
Step 3: When the dough thickens, knead with a spatula until obtain a compact dough.
Step 4: Cover the bowl with plastic wrap and refrigerate for about 25 minutes.
Step 5: Preheat the oven to 180ºC (350ºF).
Step 6: Remove the dough from the fridge, form small portions of the dough into balls and place them on a tray lined with parchment paper.
Step 7: Bake for about 10 to 12 minutes (time depends on the oven).
Step 8: Remove the cookies from the oven and serve.
TIPS FOR CINNAMON COOKIES
1. Place the oven rack in the middle. This allows the hot air to circulate evenly around the cookies, resulting in even cooking.
2. When placing the cookies on the parchment paper, leave some distance between them so they don't stick to each other when they start baking.
3. Never open the oven door while cookies are baking. The kitchen temperature is always lower than the oven temperature, what will happen is that the oven temperature will drop and the risk of the cookies sinks increases.
4. Turn off the oven and leave the cookies in the oven for another 5 minutes.
5. Do not open the oven door all the way, leave the door open about 10 to 15 centimeters (4 inches to 6 inches) and wait another 5 or 10 minutes so that the heat enters the kitchen and there is no temperature shock.

- 100 grams (1/2 cup) butter
- 150 grams (about 1 cup) dark brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon salt
