HOW TO MAKE THIS SIMPLE AND DELICIOUS CINNAMON COOKIES:
Melt the butter in the microwave and set aside.
In a bowl, mix the flour, cinnamon powder and the salt. Then, add the brown sugar, the egg, the melted butter, the vanilla extract and mix with the wire whisk until the dough starts to thicken. When the dough thickens, knead with a spatula until obtain a compact dough. Cover the bowl with cling film and refrigerate for about 25 minutes.
Remove the dough from the fridge, mold small portions of the dough in the shape of balls and place them on a tray lined with parchment paper. Bake about 10 to 12 minutes. Remove the cookies from the oven and serve with coffee latte.

- 200 grams (1 1/2 cups) all-purpose flour
- 1 tablespoon cinnamon powder
- 100 grams (1/2 cup) butter
- 150 grams (about 1 cup) dark brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon salt
Directions
- Melt the butter in the microwave and set aside.
- In a bowl, mix the flour, cinnamon powder and the salt. Then, add the brown sugar, the egg, the melted butter, the vanilla extract and mix with the wire whisk until the dough starts to thicken. - Preheat the oven to 180ºC (350ºF).
