Ingredients: butter, eggs, flour, lemon, sugar, vanilla extract

Ingredients

  • 50 ml (1/4 cup) lemon juice
  • Zest of one lemon
  • 250 grams (1 3/4 cups) self-rising flour
  • 1 medium egg
  • 150 grams (2/3 cup) granulated sugar
  • 1 teaspoon vanilla extract
  • 125 grams (1/2 cup) melted unsalted butter
  • Powdered sugar for garnish

Directions

  1. In an electric mixer, beat on medium speed the sugar and the melted butter until obtain a homogeneous mixture. Pour the lemon juice, lemon zest and beat for 1 to 2 minutes. Add the egg and the vanilla extract and beat until a quite creamy mixture. Add the flour and fold with a spatula until obtain a consistent dough.
  2. Cover the bowl with cling film and refrigerate for about 1 hour.
  3. Preheat the oven to 200ºC (400ºF). Line a baking tray with parchment paper.
