HOW TO MAKE MARIE BISCUIT SEMIFREDDO
Step 1: Beat the egg whites with three tablespoon sugar until stiff peaks form and store in the fridge.
Step 2: Place the gelatin sheets in water for about 5 minutes. Drain them well and place in a bowl. Melt for 1 minute in the microwave. Add the melted gelatin sheets to the egg whites and mix thoroughly.
Step 3: Beat the cream with the powdered sugar and the vanilla extract until stiff peaks form.
Step 4: In a rectangular dish place a layer of cream, a layer of biscuits and another layer of cream.
Step 5: Garnish with grated biscuit and serve.
TIPS FOR THE CREAM
1. We usually use cream with 30% fat. According to our experience, heavy whipping cream is the best option if you want your cream to have a thick and fluffy texture.
2. Store the cream in the fridge. Whip the fresh cream with powdered sugar. Powdered sugar helps to whip the cream and adds flavor.
3. To add extra flavor to the cream, we usually add vanilla extract (1 teaspoon of vanilla extract for 200 ml (1/2 pint (236 ml)) cream).
4. Carefully fold the cream with a spatula into the mixture to avoid losing air.

- 200 ml (1/2 pint (236 ml)) heavy whipping cream
- 3 tablespoons granulated sugar
- 2 unflavored gelatin sheets
- 1 tablespoon powdered sugar to beat the cream
- 1 teaspoon vanilla extract
- 3 egg whites
- Grated biscuit for garnish
