HOW TO MAKE COFFEE MUFFINS:
In a large bowl, mix the brown sugar and the eggs until a homogeneous mixture. Pour the coffee and whisk a little more. Add the flour and the baking powder and whisk until obtain a creamy and homogeneous mixture. Pour small portions of the cream into the paper liners and bake for about 15 to 20 minutes. Remove the muffins from the oven, let cool to room temperature and serve.

- 50 ml (1/4 cup) strong coffee
- 3 eggs
- 150 grams (about 1 cup) dark brown sugar
- 150 grams (1 cup) all-purpose flour
- 1 teaspoon baking powder
Directions
- Preheat the oven to 180ºC (350ºF). Line muffin tins with paper liners.
- In a large bowl, mix the brown sugar and the eggs until a homogeneous mixture. Pour the coffee and whisk a little more. Add the flour and the baking powder and whisk until obtain a creamy and homogeneous mixture.
- Pour small portions of the cream into the paper liners and bake until a toothpick inserted in the center of a muffin comes out clean, about 15 to 20 minutes (the time depends on the oven).
- Remove the muffins from the oven, let cool to room temperature and serve.
