HOW TO MAKE STRAWBERRY MUFFINS:
Wash the strawberries and remove the stem. Cut into small pieces and set aside.
Beat the sugar and the eggs until obtain a homogeneous mixture. Add the softened butter, milk, vanilla extract and mix for 2 to 3 minutes until it's nicely incorporated. Add the flour and the baking powder and beat until a creamy and homogeneous mixture. Add the strawberries and fold with a spatula. Pour small portions of the cream into the paper liners and sprinkle each one with light brown sugar.

- 250 grams (8 3/4 ounces) strawberries
- 2 medium eggs
- 125 grams (1/2 cup) granulated sugar
- 150 grams (1 cup) all-purpose flour
- 50 ml (1/4 cup) milk
- 100 grams (1/2 cup) softened butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 2 tablespoons light brown sugar
Directions
- Wash the strawberries and remove the stem. Cut into small pieces and set aside.
- Preheat the oven to 180ºC (350ºF). Line muffin tins with paper liners.
- In an electric mixer, beat on medium speed the sugar and the eggs until obtain a homogeneous mixture. Add the softened butter, milk, vanilla extract and mix for 2 to 3 minutes until it's nicely incorporated. Add the flour and the baking powder and beat until a creamy and homogeneous mixture. Add the strawberries and fold with a spatula.
- Pour small portions of the cream into the paper liners and sprinkle each one with light brown sugar. Bake until a toothpick inserted in the center of a muffin comes out clean, about 20 minutes (the time depends on the oven).
- Remove the muffins from the oven, let cool completely and serve.
