- Strawberries, eggs, granulated sugar, flour

HOW TO MAKE STRAWBERRY MUFFINS:

Wash the strawberries and remove the stem. Cut into small pieces and set aside.
Beat the sugar and the eggs until obtain a homogeneous mixture. Add the softened butter, milk, vanilla extract and mix for 2 to 3 minutes until it's nicely incorporated. Add the flour and the baking powder and beat until a creamy and homogeneous mixture. Add the strawberries and fold with a spatula. Pour small portions of the cream into the paper liners and sprinkle each one with light brown sugar.   • 250 grams (8 3/4 ounces) strawberries
  • 2 medium eggs
  • 125 grams (1/2 cup) granulated sugar
  • 150 grams (1 cup) all-purpose flour
  • 50 ml (1/4 cup) milk
  • 100 grams (1/2 cup) softened butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 2 tablespoons light brown sugar

Directions

  1. Wash the strawberries and remove the stem. Cut into small pieces and set aside.
  2. Preheat the oven to 180ºC (350ºF). Line muffin tins with paper liners.
  3. In an electric mixer, beat on medium speed the sugar and the eggs until obtain a homogeneous mixture. Add the softened butter, milk, vanilla extract and mix for 2 to 3 minutes until it's nicely incorporated. Add the flour and the baking powder and beat until a creamy and homogeneous mixture. Add the strawberries and fold with a spatula.
  4. Pour small portions of the cream into the paper liners and sprinkle each one with light brown sugar. Bake until a toothpick inserted in the center of a muffin comes out clean, about 20 minutes (the time depends on the oven).
  5. Remove the muffins from the oven, let cool completely and serve.
