We suggest these butter lemon muffins for a snack with friends! They are fluffy, very tasty, have excellent presentation and are perfect to serve with a hot tea!

HOW TO MAKE BUTTER LEMON MUFFINS:
In a glass bowl, mix the flour, sugar and the baking powder. Add the eggs, lemon zest and lemon juice and whisk until a creamy mixture. Add the softened butter and whisk until obtain a homogeneous and creamy mixture. Pour small portions of the dough in each one of the muffin pans (about two thirds of the pans) and bake for 15 to 20 minutes. Remove the muffins from the oven, let cool to room temperature and serve. - Preheat the oven to 180ºC (350ºF). Line muffin tins with paper liners.
