HOW TO MAKE CHICKEN AND PINEAPPLE PIZZA
For the topping: Cook the chicken in a saucepan with water seasoned with salt and a peeled onion (about 35 minutes). When the chicken is cooked, place it on a plate, remove the skin and bones and shred it with a fork; set aside.
In a saucepan, add the olive oil and the chopped onion. Sauté over low heat until the onion start to turn slightly golden brown. Add the chicken and season with pepper, nutmeg and chopped rosemary. Stir and cook over low heat for about 4 to 5 minutes.
For the dough: In a bowl, place the flour, water and salt. Knead everything with your hands. Place the dough over a table sprinkled with flour and knead it well until it’s fully involved. With a rolling pin mold the dough in the shape of pizza. Place the dough over the baking tray lined with parchment paper, spread the tomato pulp over the dough and sprinkle with a portion of grated cheese. Add the shredded chicken and the pineapple cut into pieces. Sprinkle with the remaining grated cheese and bake for about 15 to 20 minutes. Turn off the oven and serve.
