HOW TO MAKE OVEN ROASTED CHICKEN LEG QUARTERS
Step 1: Place the chicken leg quarters on a baking dish and season with salt, unpeeled crushed garlic, pepper, white wine, chouriço cut into pieces and oregano. Let marinate about one hour.
Step 2: Preheat the oven to 180ºC (350ºF).
Step 3: Drizzle the chicken leg quarters with olive oil and roast for about 1 hour, or until the skin turns golden brown and crispy. From time to time, baste the chicken with the sauce.
Step 4: Turn off the oven and serve with mashed potatoes, rice, oven roasted potatoes or a simple spaghetti.
RECIPE TIPS
1. If the chicken starts to brown too much, reduce the oven temperature or cover with aluminum foil.
2. To prevent the chicken leg quarters from drying out, use a meat thermometer to monitor the internal temperature of the chicken.
3. I always recommend marinating the chicken for about 1 to 2 hours, but if you're short on time, you can reduce the marinating time to 30 minutes or even skip this step. Skipping the marinade will speed up the process, but the chicken will lose some flavor and be less juicy.
4. If you have leftover or want to save the chicken leg quarters for another time, let the chicken cool completely and store them in the refrigerator in an airtight container (to prevent the growth of microorganisms). The chicken leg quarters can be stored in the refrigerator for up to 2 to 3 days.
