HOW TO MAKE BAKED GROUPER
Step 1: Wash the peeled potatoes and give a small cut across on each one of them. Place the potatoes in a saucepan with water and cook them for about 20 minutes. Drain the potatoes when they are cooked.
Step 2: Preheat the oven to 180ºC (350ºF).
Step 3: Peel the onions, cut in slices and place them on the bottom of a baking dish. Add the fish and the potatoes and season with salt, olive oil, white wine, pepper, bay leaf, unpeeled crushed garlic and paprika. Bake until golden brown, about one hour. Occasionally, drizzle the fish and the potatoes with the sauce.
Step 4: Turn off the oven and serve.
TIPS FOR BAKED GROUPER
1. If the fish and the potatoes start to brown too much cover with aluminum foil.
2. We usually bake at 180ºC (350ºF) but, if you lower the temperature to 150ºC (300ºF), despite taking longer to bake, it has the advantage of enhancing much more the flavors.
3. If you have leftovers, store the fish and the potatoes in the fridge in a properly covered container (to prevent the growth of microorganisms). To avoid drying out, do not reheat the food in the oven, reheat it in the microwave.

- 4 grouper steaks (about 900 grams (2 pounds))
- 3 medium onions
- 5 cloves of garlic
- 1 bay leaf
- Pepper (to taste)
- 150 ml (2/3 cup) white wine
- 100 ml (1/2 cup) olive oil
- 1 teaspoon paprika
- 1 kg (2 1/4 pounds) potatoes
- Salt (to taste)
