HOW TO MAKE BAKED MASHED POTATOES WITH TUNA AND EGG:

Cook the eggs in a saucepan with water. When the eggs are cooked, peel them and set aside.
Peel, wash the potatoes and season with salt. Cut them into round slices and fry in hot oil. When they are fried, place the potatoes in a dish with absorbent paper.
Meanwhile, shred the tuna with a fork and set aside. Place the olive oil, chopped onion, the peeled tomatoes cut into small pieces and the oregano in a saucepan and cook over low heat until the tomato start to break down. Add the tuna and season with pepper. Stir and cook for about 4 to 5 minutes.
In a bowl, mix with a fork the béchamel, the cream and the nutmeg.   • 1 kg (2 1/4 pounds) potatoes
  • 2 eggs
  • 1 medium onion
  • 2 medium ripe tomatoes
  • 50 ml (1/4 cup) olive oil
  • Pepper (to taste)
  • Nutmeg (to taste)
  • Oregano (to taste)
  • 200 ml (1/2 pint (236 ml)) whipping cream
  • 100 grams (3 1/2 ounces) grated mozzarella cheese
  • Salt (to taste)
  • Water to cook the eggs
  • Vegetable oil for frying
  • 200 ml (about 1 cup) béchamel sauce

Directions

  1. Cook the eggs in a saucepan with water. When the eggs are cooked, peel them and set aside.

  3. Meanwhile, shred the tuna with a fork and set aside. Add the tuna and season with pepper. Stir and cook for about 4 to 5 minutes, stirring occasionally.
  4. Preheat the oven to 180ºC (350ºF).
  5. In a bowl, mix with a fork the béchamel, the cream and the nutmeg.
  6. Place on the bottom of a baking dish a layer of potatoes, on top, the tuna mixture and one more layer of potatoes. Garnish with egg slices, drizzle with the béchamel and cream mixture and sprinkle with grated cheese. Bake until golden brown, about 45 minutes.
  7. Turn off the oven and serve with salad.
