INGREDIENTS FOR CODFISH LAGAREIRO

- Codfish - Salt cod, soaked for 24 hours.
- Olive oil, garlic, pepper, bay leaf and paprika - To make the sauce.
- Salt - To season the potatoes
- Small potatoes - Unpeeled small potatoes baked in the oven (wash and give a small cut across each one of them.).

HOW TO MAKE CODFISH LAGAREIRO STYLE
Step 1: Preheat the oven to 180ºC (350ºF).
Step 2: Wash the unpeeled potatoes and give a small cut across each one of them. Place the potatoes on a baking dish and season with salt.
Step 3: In a second baking dish, place the codfish and drizzle with a little olive oil.
Step 4: Place the potatoes baking dish on the top rack of the oven and the codfish baking dish on the bottom rack.
Step 5: Bake for about 50 minutes or until the potatoes and cod start to turn golden brown.
Step 6: Meanwhile, in a small saucepan, add the olive oil (200 ml (about 1 cup)), unpeeled crushed garlic, pepper, bay leaf and paprika. Stir and bring to a boil over medium-low heat. When it starts to boil, turn off the heat.
Step 7: Remove the cod and potatoes from the oven, drizzle with the olive oil mixture, and serve immediately.
TIPS FOR SOAK THE COD
1. Rinse the cod under cold water.
2. Place the cod with the skin facing up in a large bowl and cover it with cold water.
3. Allow the cod to soak for at least 24 hours, changing the water every 8 to 12 hours.
4. After 24 hours, taste a small piece of the cod to check for saltiness. If it is still too salty, continue soaking and changing the water until it reaches your desired level of saltiness.
5. The soaking time may vary depending on the thickness of the cod and the quantity of salt the cod have.

- 1/2 teaspoon pepper
- Bay leaf (to taste)
- 1 teaspoon paprika
- 1.2 kg (2 2/3 pounds) small potatoes
