HOW TO MAKE BAKED COD WITH ONION AND TOMATO:
Cut the cod into pieces. On a baking dish, place a layer of sliced onion, the cod, the peeled potatoes, the peeled tomato cut into small chunks, chopped garlic, salt, pepper, olive oil and white wine.

Ingredients
- 3 desalted cod steaks (about 800 grams (1 3/4 pounds))
- 100 ml (1/2 cup) white wine
- 2 medium onions
- 1 kg (2 1/4 pounds) small potatoes
- 2 cloves of garlic
- 100 ml (1/2 cup) olive oil
- 1/2 teaspoon pepper
- Coriander (to taste)
- 2 medium ripe tomatoes
- 1 teaspoon salt
Directions
- Preheat the oven to 180ºC (350ºF).
- Cut the cod into pieces. On a baking dish, place a layer of sliced onion, the cod, the peeled potatoes, the peeled tomato cut into small chunks, chopped garlic, salt, pepper, olive oil and white wine. Bake for about 1 hour and 30 minutes.
- Turn off the oven, sprinkle with chopped coriander and serve.
