HOW TO MAKE SALT COD WITH POTATOES AND EGGS

Step 1: Cook the eggs in a saucepan with water. When the eggs are cooked, remove the peel and cut into round slices; set aside.

Step 2: Peel, wash the potatoes and place them in a saucepan with water seasoned with salt. Bring to a boil over high heat. When the water starts boiling, reduce to medium-low heat and simmer about 20 minutes. When the potatoes are almost cooked, add the cod and cook about 6 to 7 minutes. Turn off the heat and drain the potatoes and the cod with a skimmer.

Step 3: Let the cod cool slightly and remove the skin and bones. Flake it with a fork and season with a little pepper. Cut the potatoes into round slices and set aside.

Step 4: In a large saucepan, add the olive oil, the sliced onions, chopped garlic and the bay leaf. Sauté over low heat until the onion start to turn golden brown. Add the flaked cod and the potatoes, mix gently with a spoon and cook more two to three minutes over low heat.

Step 5: Turn off the heat, add the sliced eggs, sprinkle with chopped parsley and serve.

TIPS FOR SOAK THE COD

1. Rinse the cod under cold water.

2. Place the cod with the skin facing up in a large bowl and cover it with cold water.

3. Allow the cod to soak for at least 24 hours, changing the water every 8 to 12 hours.

4. After 24 hours, taste a small piece of the cod to check for saltiness. If it is still too salty, continue soaking and changing the water until it reaches your desired level of saltiness.

5. The soaking time may vary depending on the thickness of the cod and the quantity of salt the cod have.
