HOW TO MAKE LEG OF LAMB IN THE OVEN

Step 1: In a bowl, add the lemon juice, chopped garlic, sweet red pepper paste, pepper, bay leaf and some salt. Mix with a spoon and drizzle the leg of lamb with this sauce. Let marinate about one hour.

Step 2: Preheat the oven to 180ºC (350ºF).

Step 3: Wash and peel the potatoes. Place at the bottom of a baking dish the onions cut into round slices and, on top, the leg of lamb together with the marinade and the potatoes. Drizzle everything with olive oil and white wine and bake about an hour or until golden. Occasionally, drizzle the potatoes and the lamb with the sauce.

Step 4: Turn off the oven and serve.

TIPS FOR LEG OF LAMB IN THE OVEN

1. If the leg starts to brown too much cover with aluminum foil.

2. We usually roast the leg at 180ºC (350ºF) but, if you lower the temperature to 150ºC (300ºF), despite taking longer to roast, it has the advantage of enhancing the flavors much more and the meat gets more tender.

3. If you have leftovers, store the meat in the fridge in a properly covered container (to prevent the growth of microorganisms). To avoid drying out the meat, do not reheat the food in the oven, reheat it in the microwave.

    • 1 kg (2 1/4 pounds) leg of lamb
    • 1.2kg (2 2/3 pounds) small potatoes
