HOW TO MAKE SPONGE CAKE:
Beat the eggs, egg yolks and the vanilla extract until obtain a quite creamy mixture. Reduce the mixer speed to low, add the flour and the baking powder and beat until a creamy and homogeneous mixture. Add the soft fruit and fold with a spatula. Pour the dough into the prepared pan and bake about 35 minutes. Remove the cake from the oven, unmold onto a plate, let cool completely and serve.

Ingredients
- 4 eggs
- 3 egg yolks
- 150 grams (2/3 cup) granulated sugar
- 175 grams (1 1/4 cups) all-purpose flour
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
Directions
- Preheat the oven to 180ºC (350ºF). Grease a bundt cake pan (24 x 8 centimeters (9 1/2-inch diameter with 3 1/4-inch-high sides)) with margarine and dust with flour.
- In an electric mixer, beat on medium speed the eggs, egg yolks and the vanilla extract until obtain a quite creamy mixture. Reduce the mixer speed to low, add the flour and the baking powder and beat until a creamy and homogeneous mixture. Add the soft fruit and fold with a spatula.
- Pour the dough into the prepared pan and bake until a toothpick inserted in the center comes out clean, about 35 minutes (the time depends on the oven).
- Remove the cake from the oven, unmold onto a plate, let cool completely and serve.
