HOW TO MAKE EGG WHITE ORANGE CAKE
Step 1: Preheat the oven to 150ºC (300ºF). Grease a bundt cake pan with butter and dust the inside of the pan with some flour (hold and rotate the pan so that the flour coats all surfaces).
Step 2: Beat the brown sugar, butter and the egg whites until obtain a homogeneous mixture. Pour the orange juice, orange zest and mix for 1 to 2 minutes until it’s nicely incorporated. Add the flour and the baking powder and beat until obtain a quite creamy mixture.
Step 3: Pour the batter into the prepared pan and bake for about 25 minutes.
Step 4: Remove the cake from the oven and allow to cool for 30 minutes.
Step 5: Remove from the pan and place the cake onto a serving plate. Allow to cool to room temperature.
Step 6: Dust the cake with powdered sugar and serve.

Use these two techniques to know when a cake is done:
Toothpick test: Insert a toothpick into the center of the cake. If it comes out clean with no batter sticking to it, the cake is done. If there are still some wet crumbs or batter stuck to the toothpick, leave the cake in the oven for a few more minutes.
Finger test: Gently press the center of the cake with your finger. If it springs back and doesn't leave an indentation, the cake is done. If you notice that your finger leaves indents when you press down, put the cake back in the oven for a few more minutes and check again.
When placing the cake in the oven, make sure the oven is not too hot, if it is, the cake will rise too quickly and there will be no time for the inside of the cake to cook at the same rate (in this case, what often happens is that the cake sinks in the middle).
If the oven is very hot, leave the oven door open until the temperature drops a little.

- 5 egg whites
- 200 grams (1 1/2 cups) all-purpose flour
- 75 ml (1/3 cup) orange juice
- Zest of one orange
- 150 grams (about 1 cup) dark brown sugar
- 100 grams (1/2 cup) softened unsalted butter
- 1 teaspoon baking powder
- Preheat the oven to 150ºC (300ºF). Grease a bundt cake pan (24 x 8 centimeters (9 1/2-inch diameter with 3 1/4-inch-high sides)) butter and dust the inside of the pan with some flour (hold and rotate the pan so that the flour coats all surfaces).
- In an electric mixer, beat on medium speed the brown sugar, butter and the egg whites until obtain a homogeneous mixture. Pour the orange juice, orange zest and mix for 1 to 2 minutes until it’s nicely incorporated. Add the flour and the baking powder and beat until obtain a quite creamy mixture.
- Pour the batter into the prepared pan and bake until a toothpick inserted in the center comes out clean, about 25 minutes (the time depends on the oven).
- Remove the cake from the oven and allow to cool for 30 minutes.
- Remove from the pan and place the cake onto a serving plate. Allow to cool to room temperature.
- Dust the cake with powdered sugar and serve.
