HOW TO MAKE VEGETABLE SOUP WITH SAVOY CABBAGE

Step 1: Peel and wash the potato, onions, carrots, savoy cabbage, turnip and the leek.

Step 2: In a soup pot with two liters (8 cups) water, add the potato, onions, carrots, savoy cabbage, turnip and the leek, everything cut into pieces. Bring to a boil over high heat. When starts boiling, reduce to medium-low heat and cook for 25 minutes (reserve a little cabbage, carrot, turnip and some bits of leek).

Step 3: Remove briefly the pot from heat and use a hand blender to blend the soup.

Step 4: Season the soup with olive oil and a little salt. Stir and place the pot back on the stove over high heat. When starts boiling, add bits of cabbage, sliced ​​carrots, pieces of turnip and leek. Cook for more 3 to 4 minutes.

Step 5: Turn off the heat and serve.
