HOW TO MAKE VEGETABLE SOUP WITH SAVOY CABBAGE
Step 1: Peel and wash the potato, onions, carrots, savoy cabbage, turnip and the leek.
Step 2: In a soup pot with two liters (8 cups) water, add the potato, onions, carrots, savoy cabbage, turnip and the leek, everything cut into pieces. Bring to a boil over high heat. When starts boiling, reduce to medium-low heat and cook for 25 minutes (reserve a little cabbage, carrot, turnip and some bits of leek).
Step 3: Remove briefly the pot from heat and use a hand blender to blend the soup.
Step 4: Season the soup with olive oil and a little salt. Stir and place the pot back on the stove over high heat. When starts boiling, add bits of cabbage, sliced carrots, pieces of turnip and leek. Cook for more 3 to 4 minutes.
Step 5: Turn off the heat and serve.

- 2 liters (8 cups) water

- 1 turnip
- 1 leek
- 1/2 savoy cabbage
- 3 tablespoons olive oil
- Salt (to taste)
