Pork loin with pippin apple puree

A recipe with excellent presentation, pork loin served with a delicious pippin apple puree.

Units: Metric / (Units: US)


  • For the meat:
  • 1 kg / (2 1/4 pounds) pork loin
  • 2 medium onions
  • 1 bay leaf
  • Pepper (to taste)
  • 6 cloves of garlic
  • 150 ml / (1/2 cup and 2 tablespoons) olive oil
  • 200 ml / (3/4 cup and 1 1/2 tablespoons) white wine
  • Salt (to taste)
  • For the puree:
  • 10 pippin apples
  • Water (enough to cover the bottom of the saucepan)
  • Juice of one lemon
  • 50 grams / (1 3/4 ounces) sugar
  • Cinnamon (to taste)


    Step 1

    1. For the meat:
    2. Season the pork loin with salt, chopped garlic, bay leaf, pepper and white wine. Let marinate about three to four hours.

    Step 2

    1. Preheat the oven to 180ºC / (350ºF). In a glass baking dish place the onions cut into round slices together with the pork loin and the marinade. Drizzle with olive oil and bake for one hour and 20 minutes. Occasionally drizzle the meat with their own sauce.

    Step 3

    1. For the puree:
    2. Wash, peel the apples and cut them into cubes.

    Step 4

    1. In a saucepan, place the apple pieces and enough water to cover just the bottom of the saucepan. Season with sugar, drizzle with lemon juice and bring to a boil over high heat. When starts boiling, reduce to low heat and cook the apple pieces about 20 minutes, stirring occasionally.

    Step 5

    1. When the apple is cooked, place it in a mixer. Blend until obtain a creamy mixture. Place the apple puree in a plate, sprinkle with cinnamon and serve with the pork loin.
