HOW TO MAKE CREPES WITH STRAWBERRIES
Step 1:
For the crepes:
In a bowl, add the flour, salt, sugar and mix well. Melt the margarine in the microwave; set aside.
Step 2: In an electric mixer, beat on medium speed the eggs and the milk. Reduce the mixer speed to low speed and add the flour mixture. Then, add the vanilla powder, the melted margarine and beat for 2 to 3 minutes until well incorporated.
Step 3: Grease a non-stick skillet with some butter and heat over low heat. When the butter starts melting, pour small portions of the dough with a ladle until cover completely the bottom.
Step 4: When the first side starts to turn slightly golden, flip with a spatula and cook about a minute or until golden. Repeat the process until the dough runs out.
Step 5:
Place the crepes on a plate and set aside.
Step 6:
For the filling:
In an electric mixer, beat 150 ml (1/3 pint (157ml)) of the cream with the powdered sugar and the vanilla extract until stiff peaks form.
Step 7: In a bowl, add the chocolate broken into pieces and the margarine. Melt in the microwave. Remove from microwave, add the remaining cream 100 ml (1/4 pint (118 ml)) and mix with a fork until obtain a creamy mixture.
Step 8: Wash, remove the stem from the strawberries and cut them into pieces. Place small portions of strawberries and whipped cream on each crepe and roll them over the filling. Garnish with the chocolate cream and serve.
TIPS FOR THE CREAM
1. We usually use cream with 30% fat. According to our experience, heavy whipping cream is the best option if you want your cream to have a thick and fluffy texture.
2. Store the cream in the fridge. Whip the fresh cream with powdered sugar. Powdered sugar helps to whip the cream and adds flavor.
3. To add extra flavor to the cream, we usually add vanilla extract (1 teaspoon of vanilla extract for 200 ml (1/2 pint (236 ml)) cream).

- 250 ml (1/2 pint (236 ml)) heavy whipping cream
- 100 grams (3 1/2 ounces) dark chocolate
- 2 tablespoons margarine
- 1 tablespoon powdered sugar
- 1 teaspoon vanilla extract
