- Garlic - Chopped garlic. Adds flavor.
- Olive oil - For sautéing. Adds flavor and some creaminess to the recipe.
- Water, a drizzle of olive oil and a small onion - To cook the fish.

HOW TO MAKE FISH AND PEAS RICE
Step 1: Place the fish in a saucepan with water seasoned with salt, a drizzle of olive oil and a peeled onion cut into pieces.
Step 2: Turn off the heat and remove the fish to a plate with a slotted spoon (reserve the fish cooking water). Remove the skin and bones and flake the fish with a fork; set aside.
Step 3: In a large saucepan, add the peeled tomato cut into small chunks, chopped onion, chopped garlic, olive oil and the peas. Stir and cook over low heat for about 20 minutes, stirring occasionally.
Step 4: Add the fish and season with pepper and paprika. Stir and cook the fish for 5 minutes, stirring occasionally.
Step 5: Add the rice and season with salt. Stir, pour the rice cooking water (about 600 ml (2 1/2 cups)) and bring to a boil over medium-high heat.
Step 6: Turn off the heat and serve immediately.
TIPS FOR COOKING RICE
1. We usually use long-grain rice or medium-grain rice but you can use another type of rice. Long-grain rice is looser while medium-grain rice is creamier and absorb much more the flavors.
Rice cooking time: about 10 to 12 minutes for long-grain rice and 13 to 15 minutes for medium-grain rice.
2. The amount of water for the rice depends on each person's taste. The mesure we usually use is 250 ml (about 1 cup) to 300 ml (1 1/3 cups) of water per 100 grams (1/2 cup) rice.
3. Always cook the rice with a lid and over low heat to prevent the rice from burning and sticking to the bottom of the pan.

- 800 grams (1 3/4 pounds) hake steaks
- 200 grams (7 ounces) peas
- 20 grams (1 cup) medium-grain rice
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 3 medium ripe tomatoes
- 1 medium onion
- 3 cloves of garlic
- 50 ml (1/4 cup) olive oil
- A drizzle of olive oil and a small onion to cook the fish
- Water to cook the fish (about 1 liter (4 cups))
- Salt (to taste)
