HOW TO MAKE EASY ROASTED RABBIT
Step 1: Place the rabbit on a baking dish and season with salt, pepper, nutmeg, chilli, chopped coriander and the unpeeled crushed garlic. Let marinate about one hour.
Step 2: Preheat the oven to 180ºC (350ºF). Drizzle the rabbit with the olive oil and bake until golden brown slightly, about 1 hour. Occasionally, drizzle the rabbit with the sauce.
Step 3: Meanwhile, place the unpeeled potatoes in a saucepan with water seasoned with salt. Bring to a boil over high heat. When starts boiling, reduce to low heat and cook about 20 minutes. When the potatoes are cooked, drain them with a skimmer and let cool slightly. Peel the potatoes and fry them in hot oil until golden. When the potatoes are fried, place them on a plate with absorbent paper.
Step 4: Turn off the oven and serve the rabbit with the potatoes.
TIPS FOR EASY ROASTED RABBIT
1. If the rabbit starts to golden brown too much cover with aluminum foil.
2. We usually roast the rabbit at 180ºC (350ºF) but, if you lower the temperature to 150ºC (300ºF), despite taking longer to roast, it has the advantage of enhancing the flavors much more and the rabbit gets more tender.
3. If you have leftovers, store the rabbit in the fridge in a properly covered container (to prevent the growth of microorganisms). To avoid drying out the rabbit, do not reheat the food in the oven, reheat it in the microwave.
