HOW TO MAKE RABBIT IN TOMATO SAUCE:
In a large saucepan, add the sliced onion, peeled garlic and the olive oil. Stir and sauté on a low heat until the onion start to turn slightly golden. Add the peeled tomato cut into small chunks, sweet red pepper paste, rabbit, salt, pepper, nutmeg and the white wine. Stir and cook on a low heat for about 1 hour. Turn off the heat, add small bunches of rosemary and serve with fries or white rice.

- 1.2 kg (2 2/3 pounds) rabbit cut into pieces
- 3 medium ripe tomatoes
- 50 ml (1/4 cup) olive oil
- 100 ml (1/2 cup) white wine
- 2 medium onions
- Fresh rosemary (to taste)
- 5 cloves of garlic
- 1/2 teaspoon pepper
- 1 teaspoon nutmeg
- 1 tablespoon sweet red pepper paste
- 1 teaspoon salt
