HOW TO MAKE RABBIT RICE
Step 1: In a large saucepan, add the olive oil, the chopped onion, the chopped garlic and the bay leaf. Sauté on a low heat until the onion start to turn slightly golden brown. Add the rabbit pieces together with the white wine, the peeled tomato cut into small pieces, salt, nutmeg and paprika. Stir, sprinkle with chopped coriander, cover the pan with a lid and cook over medium-low heat for about one hour.
Step 2: Add the rice and season with a little more salt. Stir, pour the water and boil over medium-high heat. When starts boiling, reduce to medium-low heat and cook for about 10 to 12 minutes.
Step 3: Turn off the heat and serve immediately.

- 1 kg (2 1/4 pounds) rabbit cut into pieces
- 100 ml (1/2 cup) olive oil
- 1 large onion
- 3 cloves of garlic
- 1 bay leaf
- Nutmeg (to taste)
- 100 ml (1/2 cup) white wine
- 250 grams (1 1/4 cups) rice
- Coriander (to taste)
- 3 medium ripe tomatoes
- 1 teaspoon paprika
- Salt (to taste)
- In a large saucepan, add the olive oil, the chopped onion, the chopped garlic and the bay leaf. Sauté on a low heat until the onion start to turn slightly golden brown, stirring occasionally. Add the rabbit pieces together with the white wine, the peeled tomato cut into small pieces, salt, nutmeg and paprika. Stir, sprinkle with chopped coriander, cover the pan with a lid and cook over medium-low heat for about one hour, stirring occasionally.
- Add the rice and season with a little more salt. Stir, pour the water (twice the rice volume) and boil over medium-high heat. When starts boiling, reduce to medium-low heat and cook for about 10 to 12 minutes.
