HOW TO MAKE BAKED RABBIT WITH HOMEMADE SAUCE

Step 1: In a bowl, combine the olive oil, lemon juice, salt, pepper, nutmeg, Dijon mustard and chopped garlic.

Step 2: Place the rabbit on a baking dish and drizzle the previous mixture. Marinate about 2 hours. Rabbit on a baking dish seasoned with homemade sauce

Step 3: Preheat the oven to 180ºC (350ºF).

Step 4: Place the rabbit in the oven until golden brown, about 1 hour. Occasionally, drizzle the rabbit with the sauce.

TIPS FOR BAKED RABBIT WITH HOMEMADE SAUCE

1. If the rabbit starts to brown too much cover with aluminum foil.

2. We usually bake the rabbit at 180ºC (350ºF) but, if you lower the temperature to 150ºC (300ºF), despite taking longer to bake, it has the advantage of enhancing much more the flavors and the rabbit gets more tender.

3. If you have leftovers, store the rabbit in the fridge in a properly covered container (to prevent the growth of microorganisms). To avoid drying out, do not reheat the food in the oven, reheat it in the microwave.
