HOW TO MAKE ROASTED RABBIT
Step 1: Place the rabbit on a baking dish and season with salt, peeled garlic, pepper, sweet red pepper paste, white wine, red wine, bay leaf and olive oil. Let marinate for about 1 to 2 hours.
Step 2: Preheat the oven to 180ºC (350ºF).
Step 3: Bake the rabbit for about 1 hour or until it start to turn golden brown. From time to time, baste the rabbit with the sauce.
Step 4: Turn off the oven and serve with green peas rice, mashed potatoes, or a simple spaghetti with grape tomato.
TIPS FOR ROASTED RABBIT
1. If the rabbit starts to golden brown too much, reduce the oven temperature or cover with aluminum foil.
2. We usually roast the rabbit at 180ºC (350ºF) but, if you lower the temperature to 150ºC (300ºF), despite taking longer to roast, it has the advantage of enhancing the flavors much more and the meat gets more tender.
3. If you have leftovers or want to save for another occasion, store the rabbit in the refrigerator in an airtight container (to prevent the growth of microorganisms). It can be stored in the refrigerator for up to 2 to 3 days.

- 75 ml (1/3 cup) olive oil
- 1/2 teaspoon pepper
- 1 teaspoon salt
