Cut the cod steaks into pieces.
In a saucepan, put the olive oil, chopped onion, chopped garlic, bay leaf, the peppers cut into strips and the cod. Season with pepper and cook over low heat about 7 to 8 minutes. Add the rice, seasoned with salt and sprinkle with saffron. Stir and fry about a minute. Pour the water (twice the rice volume), stir and boil over high heat. When starts boiling, reduce to low heat and cook about 10 to 12 minutes. Turn off the heat and serve.

- 4 desalted cod steaks (about 1 kg (2 1/4 pounds))
- 1 teaspoon saffron
- Pepper (to taste)
- 1 medium onion
- 1 bay leaf
- 1/2 red pepper
- 1/2 green pepper
- 250 grams (1 1/4 cups) rice
- 3 cloves of garlic
- 50 ml (1/4 cup) olive oil
- Salt (to taste)
