Prepare this simple and quick recipe of cod cooked in a delicious rice seasoned with tasty spices.

Units: Metric / (Units: US)

Ingredients

  • 4 desalted cod steaks (about 1 kg / (2 1/4 pounds)
  • 1 teaspoon saffron
  • Pepper (to taste)
  • 1 medium onion
  • 1 bay leaf
  • 1/2 red pepper
  • 1/2 green pepper
  • 250 grams / (8 3/4 ounces) rice
  • 3 cloves of garlic
  • 50 ml / (3 1/3 tablespoons) olive oil
  • Salt (to taste)

    Directions

    Step 1


    1. Cut the cod steaks into pieces.

    Step 2


    1. In a saucepan, put the olive oil, chopped onion, chopped garlic, bay leaf, the peppers cut into strips and the cod. Season with pepper and cook over low heat about 7 to 8 minutes, stirring occasionally.

    Step 3


    1. Add the rice, seasoned with salt and sprinkle with saffron. Stir and fry about a minute. Pour the water (twice the rice volume), stir and boil over high heat. When starts boiling, reduce to low heat and cook about 10 to 12 minutes.

    Step 4


    1. Turn off the heat and serve.
