Coffee cake with chocolate mousse and strawberries

A fresh cake, very pleasant and with an excellent presentation, confectioned with flour, coffee, sugar, yoghurt, eggs and vanilla powder, stuffed with strawberries and topped with chocolate mousse.

Ingredients

  • For the cake:
  • 200 grams / (7 ounces) all-purpose flour
  • 150 grams / (5 1/3 ounces) sugar
  • 4 eggs
  • 100 ml / (6 3/4 tablespoons) strong coffee
  • 125 grams / (4 1/2 ounces) natural yoghurt
  • 1 teaspoon vanilla powder
  • 1 teaspoon baking powder
  • For the topping:
  • 50 grams / (1 3/4 ounces) sugar
  • 150 grams / (5 1/3 ounces) dark chocolate
  • 4 eggs
  • 1 tablespoon margarine
  • 150 grams / (5 1/3 ounces) strawberries
  • Strawberries for garnish

    Directions

    Step 1


    1. For the cake:
    2. Separate the yolks from the whites. Beat the egg whites until stiff and set aside in the fridge.

    Step 2


    1. With an electric mixer beat the egg yolks with the sugar until obtain a creamy and homogeneous mixture. Pour the coffee, the yoghurt and the vanilla powder, without stop beating. Then, add the flour mixed with the baking powder. Finally, fold gently with a spatula the beaten egg whites.

    Step 3


    1. Grease a bundt cake pan (24 x 8 centimeters / (9 1/2 x 3 1/4 inches)) with margarine and sprinkle with flour. Pour the previous mixture inside the cake pan and bring to preheated oven at 180ºC / (350ºF) about 25 minutes (the time depends on the oven).

    Step 4


    1. When the cake is cooked, remove from oven, unmold onto a plate and let cool.

    1. For the topping:
    2. Separate the yolks from the whites. Beat the egg whites until stiff and set aside in the fridge.

    Step 6


    1. In a bowl place the chocolate broken into pieces along with the margarine and bring to microwave to melt. Remove from microwave and mix with the help of a spoon or a fork. Set aside.

    Step 7


    1. With an electric mixer beat the egg yolks with the sugar until obtain a creamy texture. Add the melted chocolate, without stop beating. Then, fold gently with a spatula the whipped egg whites.

    Step 8


    1. Wash, remove the stem to the strawberries and cut into slices.     Step 9


    1. Place the other half of the cake on top, cover the cake with the remaining mousse and garnish with strawberries. Serve the cake preferably cold.
