HOW TO MAKE PORTUGUESE PEAS WITH POACHED EGGS AND CHOURIÇO

RECIPE TIPS

Crack the eggs into a small bowl, one at a time, before cooking. This way you can check each egg before it goes into the pan. If a shell fragment does end up in the bowl, you can easily remove it.

If you have leftovers, store the peas in the fridge in a properly airtight container (to prevent the growth of microorganisms).

Coriander or parsley?
We prefer to use chopped coriander in this recipe but if you prefer, you can replace the coriander with chopped parsley.

    Ingredients

    • 600 grams (4 cups) frozen peas
    • 75 grams (2 2/3 ounces) Portuguese chouriço
    • 4 eggs
    • 1 medium onion
    • 1 bay leaf
    • 4 cloves of garlic
    • 1/2 teaspoon pepper
    • 1 teaspoon salt
    • 50 ml (1/4 cup) Extra virgin olive oil
    • Coriander (to taste)
    • 450 ml (2 cups) water (or enough water to cover the peas)

    Directions
