HOW TO MAKE PORTUGUESE CLAMS (AMÊIJOAS À BULHÃO PATO)
Step 1: Soak the clams in fresh water seasoned with salt for about 2-3 hours. Wash them under running water before cooking.
Step 2: In a large skillet, pour the olive oil and the chopped garlic. Sauté over a low heat for about 2 to 3 minutes, stirring occasionally.
Step 3: Add the clams, stir, cover the skillet and cook over medium-low heat until the clams open completely (about 7-10 minutes). Occasionally shake skillet while steaming.
Step 4: Turn off the heat, season with pepper, lemon juice and chopped coriander and serve.
RECIPE TIPS
1. To completely remove the sand from the clams, place them in a container of cold, salted water. You should soak the clams for about 2 to 3 hours or until you have completely removed the sand from the clams. During these 3 hours, rinse the clams with cold water about 2 to 3 times.
2. If some of the clams do not open, remove the ones that did and continue cooking the ones that didn't open for about 2 to 3 minutes. If they still do not open, we suggest that you do not eat them as they may not be good for consumption.
3. If you like fresh herbs, season the clams after cooking with rosemary or fresh thyme.
