It’s a hearty and comforting dish that brings back the warmth of traditional home-cooked meals, just like our grandmothers used to make. Best of all, it practically cooks itself — simply add all the ingredients to the pan, let it simmer, and enjoy the delicious aroma filling your kitchen.

HOW TO MAKE JARDINEIRA (PORTUGUESE BEEF STEW)
Step 1: Peel, wash the potatoes and cut them into cubes. Peel, wash the carrot and cut into small pieces. Wash the green beans, cut the ends and remove the strings. Cut the green beans into small pieces and set aside in a bowl of water along with the potatoes and carrot pieces.
Step 2: In a large saucepan, add the peeled tomato cut into chunks, beef cubes, chopped onion, minced garlic, bay leaf, salt (1 teaspoon), pepper and the olive oil.
Stir with a wooden spoon and cook over low heat for about 35 minutes, stirring occasionally.
Step 3: Add the potatoes, carrots and green beans. Season with salt (1 teaspoon) and pour in the water (enough water to cover everything).
Stir and boil over medium-high heat.
Step 4: When it starts to boil, reduce to medium-low heat and cook for about 30 minutes, stirring occasionally.
Step 5: Turn off the heat and serve.
RECIPE TIPS FOR JARDINEIRA
1. For a richer flavor and a deeper, more vibrant color, add 3 to 4 tablespoons of tomato paste. You can also add sliced Portuguese chouriço.
This is just a suggestion; if you want my opinion, leave the recipe as it is. Adding those ingredients might make the Jardineira more flavorful, but it would also make it a lot less healthy!
2. If you have any leftovers, allow the Portuguese beef stew to cool to room temperature before transferring it to an airtight container. This helps prevent the growth of microorganisms and keeps the dish fresh. You can store the Jardineira in the refrigerator for up to 2 to 3 days.

- 3 large tomatoes
- 1 large onion
- 4 cloves of garlic
- 850 grams (1 3/4 pounds) potatoes
- 50 ml (1/4 cup) olive oil
- 1 bay leaf
- 1 teaspoon pepper
- 250 grams (8 3/4 ounces) green beans
- 1 large carrot
- 2 teaspoons salt
- Water (about 500 ml (about 2 cups))
