HOW TO MAKE BAKED CROAKER
Step 1: Preheat the oven to 180ºC (350ºF).
Step 2: Peel and wash the potatoes. Place the fish and the potatoes on a baking dish and season with salt, nutmeg, pepper, peeled garlic, onion cut into quarters, the peppers cut into strips and the unpeeled tomatoes cut into quarters. Drizzle with white wine and olive oil and bake for about 1 hour and 10 minutes. Occasionally, drizzle the potatoes and the fish with the sauce.
Step 3: Turn off the oven and serve.
TIPS FOR BAKED CROAKER
1. If the fish starts to brown too much cover with aluminum foil.
2. We usually bake the fish at 180ºC (350ºF) but, if you lower the temperature to 150ºC (300ºF), despite taking longer to bake, it has the advantage of enhancing much more the flavors.
3. If you have leftovers, store the fish and the potatoes in the fridge in a properly covered container (to prevent the growth of microorganisms). To avoid drying out, do not reheat the food in the oven, reheat it in the microwave.

- 1.2 kg (2 2/3 pounds) small potatoes
- 1/2 teaspoon nutmeg
- 1/2 teaspoon pepper
- 2 medium onions
- 100 ml (1/2 cup) white wine
- 2 medium tomatoes
- 1/2 red pepper
- 1/2 orange pepper
- 1/2 yellow pepper
- 4 cloves of garlic
- 100 ml (1/2 cup) olive oil
- Salt (to taste)
