  • 2 egg
  • 2 egg yolks
  • Pepper (to taste)
  • Olive oil (to taste)
  • 1 pita bread
  • 1 clove of garlic
  • 1 sprig of coriander
  • 1 tablespoon lemon juice
  • 2 teaspoons vinegar
  • 2 tablespoons margarine
  • Salt (to taste)
  • 4 ham slices


  1. In a saucepan place enough water to poach the eggs, two teaspoons vinegar and a sprig of coriander. Bring to a boil over medium-high heat. When you start to see small air bubbles coming up from the bottom of the pan, add the eggs and poach them on medium heat about 3 to 4 minutes.
  2. Meanwhile, melt the margarine in a skillet or in the microwave. In a blender place the two egg yolks and the lemon juice. Mix for about 15 seconds, reduce the speed and add the melted margarine with salt and the pepper. Mix more about 10 seconds and set aside.
  3. Cut the bread in two slices and toast slightly in the toaster. Rub a peeled clove of garlic in the two bread slices and sprinkle with a little pepper. Drizzle the bread with olive oil and, on top of each one, place two ham slices, the poached eggs and drizzle with the sauce. Sprinkle with a little pepper and serve immediately.
