    For the fish:

  • 4 swordfish steaks (about 800 grams (1 3/4 pounds))
  • All-purpose flour
  • Vegetable oil for frying
  • Salt (to taste)
  • For the shrimps:

  • 250 grams (8 3/4 ounces) shrimp
  • 50 ml (1/4 cup) olive oil
  • 3 cloves of garlic
  • Juice of one lemon
  • Coriander (to taste)
  • Salt (to taste)
  • For the rice:

  • 300 grams (1 1/2 cups) rice
  • 50 ml (1/4 cup) olive oil
  • 2 cloves of garlic
  • 3 medium ripe tomatoes
  • 1 medium onion
  • Salt (to taste)

  1. For the fish:
Season the fish with salt. Drain well the steaks and coat them with flour.
  2. Heat a frying pan with vegetable oil. When hot, add the fish steaks and fry them on both sides until they turn golden. When they are fried, place them on a platter over absorbent paper.
  3. For the shrimp:
Season the shrimps with lemon juice. Leave to marinate about 15 minutes.
  4. Cook the shrimps about five minutes in a pan with water seasoned with salt. When the shrimps are cooked, drain them and allow to cool. Remove the peel and set aside.
  5. Place the olive oil in a pan along with the chopped garlic. Bring to low heat and leave to sauté about three minutes. Then, add the shrimps and fry them on both sides over low heat about 5 minutes with the pan covered. Stir once in a while with a wooden spoon. Turn off the heat and sprinkle with chopped coriander.
  6. For the rice:
In a pan, place the olive oil, chopped garlic, the peeled tomatoes cut into small chunks and the chopped onion. Leave to sauté over low heat until the tomato start to break down. Add the rice and season with salt. Pour the water (enough to completely cover the rice), stir, simmer and cook about 10 minutes.
  7. Serve the fish with the shrimps and the tomato rice.
