HOW TO MAKE LEMON CHOCOLATE CHIP MUFFINS:

In an electric mixer, beat on medium speed the sugar, eggs and the lemon zest until obtain a homogeneous mixture. Pour the lemon juice and mix for 2 to 3 minutes until it’s nicely incorporated. Reduce the mixer speed to low, add the flour and the baking powder and beat until a creamy mixture. Add the chocolate chips and fold with a spatula.   • 2 eggs
  • Juice of one lemon
  • Zest of one lemon
  • 100 grams (3 1/2 ounces) chocolate chips
  • 150 grams (1 cup) all-purpose flour
  • 125 grams (1/2 cup) granulated sugar
  • 1 teaspoon baking powder

Directions

  1. Preheat the oven to 180ºC (350ºF). Line muffin tins with paper liners.
