
These delicious muffins flavored with lemon and garnished with chocolate chips are very simple and quick to make. They are perfect for serving as a snack with a cup of coffee. Bon appetit!!!

- Lemon juice, chocolate chips, flour, eggs, granulated sugar
HOW TO MAKE LEMON CHOCOLATE CHIP MUFFINS:
In an electric mixer, beat on medium speed the sugar, eggs and the lemon zest until obtain a homogeneous mixture. Pour the lemon juice and mix for 2 to 3 minutes until it’s nicely incorporated. Reduce the mixer speed to low, add the flour and the baking powder and beat until a creamy mixture. Add the chocolate chips and fold with a spatula. Pour small portions of the cream into the paper liners
and bake for 10 to 12 minutes. Remove the muffins from the oven, let cool completely and serve.

- 2 eggs
- Juice of one lemon

- 100 grams (3 1/2 ounces) chocolate chips
- 150 grams (1 cup) all-purpose flour
- 125 grams (1/2 cup) granulated sugar
- 1 teaspoon baking powder
Directions
- Preheat the oven to 180ºC (350ºF). Line muffin tins with paper liners.
- In an electric mixer, beat on medium speed the sugar, eggs and the lemon zest until obtain a homogeneous mixture. Pour the lemon juice and mix for 2 to 3 minutes until it’s nicely incorporated. Reduce the mixer speed to low, add the flour and the baking powder and beat until a creamy mixture. Add the chocolate chips and fold with a spatula.
- Pour small portions of the cream into the paper liners and bake until a toothpick inserted in the center of a muffin comes out clean, about 10 to 12 minutes (the time depends on the oven).
- Remove the muffins from the oven, let cool completely and serve.
