HOW TO MAKE LEMON PIE
Step 1: Line a pie pan (approximately 24 centimeters (9 1/2 inches)) with the shortcrust pastry. Prick the bottom with a fork and set aside.
Step 2: Preheat the oven to 180ºC (350ºF).
Step 3: In an electric mixer, beat the sugar and the butter until obtain a compact mixture. Add the lemon juice and the lemon zest and whisk well with a wire whisk. Add the eggs and whisk until a slightly creamy mixture. Finally, add the flour and the baking powder and whisk until obtain a creamy and homogeneous mixture.
Step 4: Pour the cream over the pie and bake until slightly golden, about 30 to 35 minutes.
Step 5: Remove from oven and serve.
TIPS FOR LEMON PIE
1. When preheating the oven, make sure you have all ingredients ready to start making the pie.

- 125 grams (4 1/2 ounces) all-purpose flour
- 150 grams (2/3 cup) granulated sugar
- 4 medium eggs
- 200 grams (7 ounces) shortcrust pastry
- 100 grams (1/2 cup) softened unsalted butter
- Zest of a lemon
