HOW TO MAKE ROASTED BITTERSWEET CHICKEN
Step 1: Preheat the oven to 180ºC (350ºF).
Step 2: Place the chicken on a baking dish with the onion cut into quarters and the peeled garlic. Season with salt, pepper, nutmeg, oregano, thyme, honey, brown sugar, bay leaf, lemon juice, cinnamon and Worcestershire sauce.
Step 3: Drizzle with the olive oil and bake until golden brown, about 50 minutes. Occasionally drizzle the chicken with the sauce.
Step 4: Turn off the oven and serve the chicken with chips and lettuce salad.
TIPS FOR ROASTED BITTERSWEET CHICKEN
1. If the chicken starts to brown too much cover with aluminum foil.
2. We usually roast the chicken at 180ºC (350ºF) but, if you lower the temperature to 150ºC (300ºF), despite taking longer to roast, it has the advantage of enhancing the flavors much more and the meat gets more tender.
3. If you have leftovers, store the chicken in the fridge in a properly covered container (to prevent the growth of microorganisms). To avoid drying out the chicken, do not reheat the food in the oven, reheat it in the microwave.

- 2 tablespoons dark brown sugar
- 75 ml (1/3 cup) olive oil
- 1 tablespoon honey
- 1/2 teaspoon cinnamon powder
- Oregano (to taste)
- Pepper (to taste)
- Bay leaf (to taste)
- Nutmeg (to taste)
- Thyme (to taste)
- 1 large onion
- Juice of one lemon
- 4 cloves of garlic
- 1 tablespoon Worcestershire sauce
- Salt (to taste)
