HOW TO MAKE ROASTED RABBIT WITH POTATOES
Step 1: Preheat the oven to 180ºC (350ºF).
Step 2: Wash the unpeeled potatoes and give a small cut across each one of them.
Step 3: Place the rabbit and the potatoes on a baking dish and season with salt, unpeeled crushed garlic, pepper and paprika. Drizzle with olive oil and bake until golden, about 1 hour and 20 minutes. Occasionally, drizzle the rabbit and the potatoes with the sauce.
Step 4: Turn off the oven and serve.
TIPS FOR ROASTED RABBIT WITH POTATOES
1. If the rabbit starts to brown too much cover with aluminum foil.
2. We usually roast the rabbit at 180ºC (350ºF) but, if you lower the temperature to 150ºC (300ºF), despite taking longer to roast, it has the advantage of enhancing much more the flavors and the rabbit gets more tender.
3. If you have leftovers, store in the fridge in a properly covered container (to prevent the growth of microorganisms). To avoid drying out the rabbit, do not reheat the food in the oven, reheat it in the microwave.

- 1.2 kg (2 2/3 pounds) rabbit cut into pieces
- 200 ml (about 1 cup) olive oil
- 8 cloves of garlic
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 1 kg (2 1/4 pounds) small potatoes
- Salt (to taste)
