HOW TO MAKE SCRAMBLED EGGS WITH CHOURIÇO:
Whisk the eggs in a bowl. Add the chouriço cut in small pieces and the chopped parsley and mix well.
Season with a little salt if necessary.
Heat over low heat the olive oil in a frying pan. Add the eggs mixture and stir with a spatula for about 4 to 5 minutes until the eggs are cooked. Turn off the heat, immediately remove the eggs from the skillet to not overcook and serve with toasted bread.
