HOW TO MAKE SPAGHETTI WITH CHOURIÇO
Step 1: In a large saucepan, add the olive oil, chopped onion, bay leaf, peeled tomatoes cut into small pieces, sweet red pepper paste and the sliced chouriço. Stir with a wooden spoon and cook over low heat until the tomato start to break down, stirring occasionally.
Step 2: Add the spaghetti, pour the water (enough water to completely cover the mixture) and season with salt. Boil over medium-high heat.
Step 3: Once it starts to boil, reduce to low heat and cook for about 10 minutes.
Step 4: Turn off the heat, sprinkle with chopped rosemary and serve.

- Portuguese chouriço (about 150 grams (5 1/3 ounces))
- 1 medium onion
- 1 bay leaf
- Rosemary (to taste)
- 3 medium ripe tomatoes
- 1 tablespoon sweet red pepper paste
- 50 ml (1/4 cup) olive oil
- 1 teaspoon salt
