A simple and quick omelet recipe to prepare, peeled shrimp fried in olive oil and onion, mixed in eggs and chopped parsley.
- 200 grams / (7 ounces) peeled shrimp
- 4 eggs
- A drizzle of olive oil
- 1 small onion
- Pepper (to taste)
- Parsley (to taste)
- Salt (to taste)
- In a bowl, beat the whole eggs with the help of a fork and season with salt, pepper and chopped parsley.
- Place the olive oil in a frying pan along with the chopped onion and the peeled shrimp. Bring over low heat and fry the shrimp about five minutes. Stir once in a while. Then, add the beaten eggs and go folding gently the eggs in the shrimp with a spatula. Fry on both sides.
- Turn off the heat and serve with lettuce salad.
