Long grain rice - In this recipe we use long grain rice but you can also use medium grain rice. Long grain rice is looser while medium grain rice is creamier and absorbs all the flavors.
Curry powder - Adds color and flavor to the rice.
Peas - Frozen peas. Defrost the peas about 25 to 30 minutes before cooking them.
Olive oil, garlic powder and chopped onion - To sauté and flavor.
Water - To cook the rice.
Coriander - Chopped coriander. Adds color and a very pleasant flavor to the recipe.
Salt - Highlights all the other flavors.

HOW TO MAKE CURRY RICE
Step 1: In a large saucepan, add the chopped onion, peas and olive oil. Stir and cook over medium-low heat for about 15 minutes, stirring occasionally.
Step 2: Add the rice and season with salt, garlic powder and curry powder. Stir, pour the water and bring to a boil over medium-high heat.
Step 3: When it starts to boil, reduce to low heat and cook the rice for approximately 10 to 12 minutes.
Step 4: Turn off the heat and sprinkle with chopped coriander. Mix well and serve.
TIPS FOR COOKING RICE
1. After the rice is cooked, turn off the heat, cover de pan and let the rice rest for about 5 minutes.
2. We usually use long-grain rice or medium-grain rice but you can use another type of rice. Long-grain rice is looser while medium-grain rice is creamier and absorb much more the flavors.
3. The amount of water for the rice depends on each person's taste. The mesure we usually use is 250 ml (about 1 cup) to 300 ml (1 1/3 cups) of water per 100 grams (1/2 cup) rice.
4. Always cook the rice with a lid and over low heat to prevent the rice from burning and sticking to the bottom of the pan.
5. For this curry rice, we added peas, but you can use other types of ingredients like carrots, bacon, chicken, beef or fish.
