HOW TO MAKE BAKED CHICKEN BREAST WITH LEMON MUSTARD SAUCE
Step 1: In a small bowl, combine the Dijon mustard, olive oil, chopped thyme, grated garlic, nutmeg, salt and lemon juice.
Step 2: Place the chicken breasts in a baking dish and pour over the lemon and mustard sauce. Let marinate for about 1 hour.
Step 3: Preheat the oven to 180ºC (350ºF).
Step 4: Bake until slightly golden brown, about 45 minutes. Baste the chicken breast occasionally with the sauce to prevent drying out.
Step 5: Turn off the oven and serve the chicken breast with mashed potatoes, green peas rice or carrot rice.

3. These days, chicken breasts are huge. One solution is to slice it lengthwise to produce two flatter chicken cutlets. This is easier than trying to pound a chicken breast flat with a meat mallet. (Don't forget that large chicken breasts take longer to cook)
