- Cherry liqueur - Adds a sweet flavor to the mousse.

HOW TO MAKE COFFEE MOUSSE
Step 1: Whip the cream with the powdered sugar and the vanilla extract until stiff peaks form. Reserve in the fridge.
Step 2: Mix the cherry liqueur in the coffee.
Step 3: In a bowl, whisk the egg yolks and the sugar until obtain a creamy mixture.
Step 4: Add the whipped cream and fold gently with a spatula.
Step 5: Pour the mousse in individual bowls and refrigerate for about three hours.
Step 6: Remove from fridge, garnish with cinnamon and serve.
TIPS FOR THE CREAM
1. We usually use cream with 30% fat. According to our experience, heavy whipping cream is the best option if you want your cream to have a thick and fluffy texture.
2. Store the cream in the fridge. Whip the fresh cream with powdered sugar. Powdered sugar helps to whip the cream and adds flavor.
3. To add extra flavor to the cream, we usually add vanilla extract (1 teaspoon of vanilla extract for 200 ml (1/2 pint (236 ml)) cream).
4. Carefully fold the cream with a spatula into the mixture to avoid losing air.

- 200 ml (1/2 pint (236 ml)) heavy whipping cream
- 3 egg yolks
- 1 tablespoon powdered sugar
- 1 teaspoon vanilla extract
- 75 grams (1/3 cup) granulated sugar
- 1 tablespoon
- Cinnamon powder for garnish
- Whip the cream with the powdered sugar and the vanilla extract until stiff peaks form. Reserve in the fridge.
- Mix the cherry liqueur in the coffee.
- In a bowl, whisk the egg yolks and the sugar until obtain a creamy mixture. Pour the coffee and mix well.
