HOW TO MAKE LEEK SOUP
Step 1: Peel and wash the potatoes, onions, carrot, turnip and one leek. In a large saucepan with 2 liters (about 8 cups) water put the potatoes, onions, leek, turnip and the carrot, everything cut into pieces. Bring to a boil over high heat. When starts boiling, reduce to medium-low heat and cook for about 25 minutes.
Step 2: Remove briefly the saucepan from heat and use a hand blender to blend the soup until creamy. Season with olive oil and some salt and add the remaining peeled leek cut into round slices. Stir and place the saucepan back on the stove over high heat. When starts boiling, reduce to medium-low heat and cook about 5 minutes.
Step 3: Turn off the heat and serve.

- 3 tablespoons olive oil
- 1 turnip
- Salt (to taste)
