HOW TO MAKE OVEN BAKED CHICKEN LEG QUARTERS
Step 1: Place the chicken leg quarters on a glass baking dish.
Step 2: Season with salt, nutmeg, curry, chopped garlic, lemon juice, olive oil and a few fresh thyme sprigs. Let marinate for 1 to 2 hours.
Step 3: Preheat the oven to 180ºC (350ºF).
Step 4: Bake the chicken until golden, about 1 hour. Occasionally, baste the chicken with the sauce to prevent drying out.

Is it better to bake the chicken at 200ºC (400ºF) or 180ºC (350ºF)?
If you bake at 200ºC(400ºF), the chicken skin will be more crispy. (cooking time can vary). We usually bake the chicken at 180ºC(350ºF), we think this is the ideal temperature to obtain a juicy and tender chicken.
Note: What we usually do is open the oven from time to time and baste the chicken with the sauce that is full of seasonings. In addition to preventing the chicken from drying out, we are adding more flavor to the recipe.
How long should I marinate this recipe?
Our suggestion is to marinate for about 2 hours, but If you are short on time, you can reduce the marinating time to 1 hour or skip this step. Skipping the marination step might speed up the process, but the chicken will lose flavor and tenderness.
Remember that while marinating enhances flavor and tenderness, it's important not to over-marinate, especially with acidic marinades such as lemon or orange, as this can negatively affect the texture of the chicken.
