HOW TO MAKE STUFFED BREAD

Step 1: Preheat the oven to 200ºC (400ºF).

Step 2: Peel the skin off of the chouriço and cut the chouriço into pieces. Place the chouriço, the peeled garlic and the oregano in a food processor and pulse until well chopped.

Step 3: In a large bowl, mix the chouriço mixture, grated cheese and mayonnaise with a spoon.

Step 4: Cut off the top of the bread with a knife and remove the inside (reserve the bread crumb).

Step 5: Place the bread filled with the chouriço and cheese mixture and the bread crumb on a baking tray.

Step 6: Cover with the lid and bake for 20 to 25 minutes.

Step 7: Remove the bread from the oven and serve hot.

    Ingredients

    • 500 grams (17 1/2 ounces) bread
    • 150 grams (5 1/3 ounces) Portuguese chouriço
    • 150 ml (2/3 cup) mayonnaise
    • 1 tablespoon oregano
    • 200 grams (7 ounces) grated mozzarella cheese
    • 3 cloves of garlic

    Directions

    1. Preheat the oven to 200ºC (400ºF).

    I’m thrilled to have found this recipe site! I’m not Portuguese, but I grew up near Fall River, MA and grew up on the food. Big part of our family’s traditions now.
    I’m going to try making the stuffed bread next week for my son and will use linguica (all I can find here in Washington state). I’ll make the bread myself, but am wondering the best kind to make.
