HOW TO MAKE TUNA AND POTATO PIE WITH PORTUGUESE SAUSAGE
Step 1: Drain and flake the tuna with a fork; set aside.
Step 2: Peel and wash the potatoes. Cut into small cubes and season with salt.
Step 3: Heat the oil in a deep fryer. Once the oil is shimmering, place the potatoes in the fryer and fry until lightly golden brown.
Step 4: Transfer the fries to a paper towel-lined plate to drain the excess oil.
Step 5: In a large saucepan, add the olive oil, chopped onion and the peeled tomatoes cut into small pieces. Stir and cook over low heat until the tomato start to break down, stirring occasionally.
Step 6: Add the tuna, chopped coriander, béchamel sauce and the fries. Stir and cook for about 2 to 3 minutes, stirring occasionally. Turn off the heat and let it rest for about 5 minutes.
Step 7: Preheat the oven to 180ºC (350ºF).
Step 8: Grease a pie pan (24 centimeters (9 1/2 inches)) with butter, line with puff pastry and prick the bottom with a fork.
Step 9: Fill the pastry with the tuna and potato mixture, garnish with slices of Portuguese sausage and sprinkle with grated cheese.
Bake for about 30 minutes or until golden.

- 2 medium ripe tomatoes
- 1 medium onion

- 50 ml (1/4 cup) olive oil
- 200 ml (about 1 cup) Béchamel sauce
- 75 grams (2 2/3 ounces) grated cheese (Mozzarella or Parmesan cheese)
